General information

Central Valley

Casillero Del Diablo Reserva Cabernet Sauvignon is a wine from Central Valley, region of Chile ,Central Valley is Chile's most productive and internationally known wine region, due predominately to its proximity to the national capital Santiago. It is located directly across the Andes. The Central Valley gathers four wine growing subregions: the Maipo Valley, the Rapel Valley, the Curicó Valley and the Maule Valley. The Central Valley is home to a large variety of grapes, but plantings are dominated by the internationally popular Cabernet Sauvignon, Merlot, Syrah, Chardonnay and Sauvignon Blanc. Chile's icon grape, Carmenere, is also of importance here, just as Malbec is to Mendoza, on the other side of the Andes. The cooler corners of the Central Valley are being increasingly developed, as winemakers experiment with varieties such as Viognier, Riesling and even Gewurztraminer.

  • Cabernet Sauvignon(100%)
One of the most cultivated grape variety in the world. Often blended with Merlot and Cabernet Franc, it is grown in nearly every wine producing country, thanks to its hardy constitution. It can be identified by its thick skin and some low yields. In a blend, Cabernet-Sauvignon brings tannins, structure and acidity, which are the keys to a perfect aging process. Californian Nappa Valley has espacially well worked this varietal, which is the main factor of its extrordinary recognition and success. Known for its vegetal flavors such as mint and eucalyptus, Cabernet Sauvignon can turn a wine with herbaceous dominances if harvested too green.

In the closing years of the 19th century Don Melchor de Concha y Toro discovered that his most treasured wines had been pilfered from the casillero (cellar) beneath his family home. To discourage further theft, the enterprising Don spread a rumor that his deepest, darkest cellars were haunted by the devil. Today, the original Concha y Toro family estate, complete with its Devil's Cellar, is Chile's leading tourist destination!

After fermentation in stainless steel tanks, 60% of the wine is aged in medium toast, American oak for 8 months, 40% is aged in stainless steel for 8 months.
